I'm taking my AS levels this year inshaallah. I have chosen my main subjects and I'll be taking them during the summer session. I'd like to know if I can take an extra subject and take an exam for it during the Winter session. And if I can, would I need to take the A2 part of it in the following year's winter session?

You'll have to ask your school for this but if your school has no restrictions then yes you can take it's exam for winter.
You can chose to either take half qualification (AS only) or full (AS and A2) so you don't necessarily have to do A2 for it.
